Why don't more people realize how incredible Jon Huntsman would be for America?

Because even though his tax policies are conservative, the man remains a big spender (as shows his records in Utah). He is pro-business (which is not capitalist) and wants more control over education and individuals' private lives by refusing homosexuals the right to marry.
